Fried Baloney Sandwiches
Simply heat a small amount of peanut oil on medium in a large skillet.
With chicken scissors cut an inch or two into the slice of baloney 3-4 time to keep it from curling. Only use thick sliced deli baloney, too, the pre-packaged pre-sliced stuff will shrivel up to nothing.
Plan on two pieces of bologna per sandwich. Fry about three minutes per side, adding a little more oil if necessary. When it’s frying on the second side, smear on a little barbeque sauce.
To build the sandwich, use white bread. This is no time to counting calories or fussing about whole grains. Add lettuce, tomato and onion if you like, or if you are a purest like me just use the sauce on fried bologna.
Top with cheese while still warm and put the sandwich together. Some folks toast the bread. I do, it makes for a better presentation.
