Basil Bisque
4 Tablespoons butter
2 cups celery, chopped
2 teaspoons garlic, minced
28 oz tomatoes (whole tomatoes, seeded, puree, and if you're experiencing a bumper crop of tomatoes like my family is, by all means please use the freshest from your garden!)
2 cups carrots, grated or diced
2 cups onions, diced
1/4 cup flour
1 1/2 cups tomato juice
3 cups chicken broth
4 Tablespoons fresh basil, torn and stems removed
1 2/3 cup heavy cream
Sauté vegetables and add flour to make roux. Add stock and juice. Add the remaining ingredients,except cream. Simmer until vegetables are tender and puree. Add cream, heat over low heat. Add more basil for garnish. And for a heartier meal, add prepared cheese tortellini. De-Lish!
