Garlic Cheese Grits
1 1/4 cups grits, uncooked
3 1/2 cups boiling water
1 roll garlic cheese (This is hard to find, but groceries stock it at Christmas. Buy several and freeze for use throughout the year)
1/2 cup butter
2 eggs
1 cup milk
1/2 cup grated cheddar cheese
Cook grits in boiling water until done, about 30 minutes. Add butter and garlic cheese. Blend egg and milk and add to grits. Pour into 2 qt greased casserole dish and bake for 45 minutes uncovered in a 350 degree oven. Sprinkle with grated cheese and bake 15 minutes before serving.
