Tennessee Caviar
Ingredients:
1 lb package frozen Black Eye Peas
1 cup water
1 small red onion finely chopped
1 half large red bell pepper, finely chopped
2 tablespoons minced fresh parsley
Dressing:
1/4 cup olive oil
2 tablespoons white vinegar
2 tablespoons sugar
salt and pepper to taste
hot sauce to taste
Directions:
Heat peas with water to boiling, reduce heat, simmer and cover till peas are tender. Drain well and cool. Combine with finely chopped vegetables and parsley and season with a dressing. Serve chilled or at room temperature.
