Corn Biscuits
Adapted from In the Kitchen class at the Brentwood Library, Maria Sochor, instructor
1 1/2 cups flour
1/2 cup cornmeal
1 tsp. salt
3 tsp. baking powder
Combine ingredients in a 16 oz. jar. Shake well to combine.
Instructions:
Preheat oven to 400 degrees. Grease a cookie sheet. Pour contents of jar into medium bowl. Add 6 tablespoons cold margarine (try Earth Balance) or butter. With your hands, rub margarine/butter into dry ingredients until the mixture resembles a coarse meal. Stir in up to 2/3 cup cold soymilk or milk, using just enough to pull mixture into a dough. Turn out dough onto cookie sheet and press to about 3/4" thick. Using a biscuit cutter or a drinking glass, cut out biscuits. Press scraps together and cut out remaining biscuits. Spread biscuits out on pan. Bake for 8-14 minutes, until lightly golden. Transfer immediately to rack.
