Corn Pone
3 cups cornmeal
3 scant cups boiling water
3 Tablespoons lard
3 teaspoons salt
Melt lard in 9" cast iron skillet to coat. Pour remaining fat into other ingredients and mix. Bake at 350º F about 45 minutes or until golden brown. Broil for the last 2 to 3 minutes to make it extra golden brown and crispy around the edges.
Ever wonder what the difference is between a Corn Pone and a Hoe Cake? Hoe Cakes are even simpler than corn pones because they are made of cornmeal, water and salt. No fat or lard. It’s speculated they got their name from folks baking them over an open fire on the flat side of their gardening hoes.
