Double Chocolate Snowflake Fudge
Adapted from In the Kitchen class at the Brentwood Library, Maria Sochor, instructor
1/2 cup cocoa powder, sifted
1 cup semi-sweet chocolate chips
2 Tablespoons butter
1/2 cup coconut milk
1/2 tsp. vanilla extract
1 cup unsweetened coconut flakes (Organic, from Whole Foods, looks most like "snow.")
Grease an 8 x 8 pan, or multiple smaller pans. Place powdered sugar and cocoa powder in a large bowl and set aside. Place chocolate chips, margarine, coconut milk, and vanilla in a glass bowl or 2 cup Pyrex pitcher. Microwave until the mixture starts to bubble, about 1 to 1 1/2 minutes. Stir to melt chocolate chips. Pour into dry mixture and stir vigorously until smooth. Press into greased pan(s). Sprinkle coconut over surface and press gently. Allow to cool thoroughly before cutting.
Variations:
Candy Cane Fudge
Replace vanilla extract with peppermint extract. Add 4 crushed candy canes to fudge mixture. Replace coconut flakes with 5 more crushed candy canes.
Cookies and Cream Fudge
Add 8 crushed Oreos to fudge mixture. Replace coconut flakes with 8 more crushed Oreos.
Purchase an inexpensive dish and wrap fudge in dish creatively to give as a Christmas Happy or Hostess Gift.
