Mary's Authentic Texas Chili
Brown 1 1/2 lbs Hamburger meat
Saute the following in "drippings"
1 large onion, chopped
1 Tb. Parsley flakes
2 cloves minced Garlic, or more to taste
2 tsp Red Pepper, or more to taste
1 tsp Celery Flakes
Add meat back then add:
2 tsp Oregano
1 Tb Chili powder
salt and pepper to taste
Add:
1 can Rotel or diced tomatos, depending on the heat
1 plastic bottle of tomato juice
1 tsp sugar
1/2 tsp nutmeg
2-3 cans red beans, or chili beans, or pinto beans or combination thereof
OPTIONAL:
1 to 2 ounces of unsweetened chocolate, or 1 to 2 Tb unsweetened cocoa powder. (be careful, too much makes it bitter!)
Mary said she also heard of using a dash of cinnamon, but had never tried it herself. So I gave it a shot. Very interesting!
Cook for 1 hour
Of course it's ALWAYS better the next day!
I'll serve the chili with chopped scallions, sour cream, grated cheddar and a few corn chips. Perfect meal to make ahead and let the flavors marry. That way you can enjoy your guests on game day.
