Winter Pickles, aka Sweet Garlic Pickles
1 gallon sour pickles
2 tbsp alum powder
5 lbs sugar
2 boxes pickling spices
1 box garlic buds
1 cup cider vinegar
1/2 cup tarragon vinegar Slice pickles 1/4 inch thick or thicker, and soak them in ice water with alum
powder for 2-4 hours. Keep it cold by adding ice.
In a container put 1 inch layer of sugar, one inch layer of pickles, pickling spices (sprinkled over), 1 clove garlic, repeat until all pickles are used. Pour vinegars over top and let sit 36 hours and stir once a day.
Transfer to smaller jars to share with family and friends. Keep refrigerated if you do not preserve by canning in a pressure cooker or hot water bath.
