Ingredients
2 cups whole milk
½ cup + 1 Tbsp. sugar, divided
5 Tbsp. butter
2 tsp. sea salt
2 pkgs. active dry yeast
6 cups all-purpose flour, plus more for dusting
3 beaten eggs
Combine milk, 1/2 c. sugar, butter, and salt in a medium saucepan. Heat over medium heat until butter melts and sugar dissolves.
Remove from heat. Allow to cool to lukewarm but dumping ice into the sink and set pan on top of the ice. This step is really important because if the mixture is too hot, it will kill the yeast.
While the milk mixture is cooling, dissolve the yeast and 1 Tbsp. sugar in warm water. Let stand about 10 minutes. The mixture will bubble up. If it doesn't, your yeast is either old or the water was too warm or not warm enough and you’ll need to repeat this step. Properly activated yeast is the crux of the whole recipe!!!
In a large mixing bowl, combine 3 c. flour and milk mixture. Beat on low for 30 seconds, scraping sides of bowl constantly. Add yeast mixture and beat on high for 3 minutes.
Stir in as much remaining flour as needed to make a soft dough. This dough should be very soft–it will be coming away from the sides of the bowl, but it will still stick to your finger when you touch it.
Spray the top of the dough with non-stick spray and place a clean kitchen towell over it and place the bowl in a warm place, like inside the oven with the light on; allow to rise 1 hour.
Flour your hands and punch down dough.
Spray 2 9×13 glass pans with cooking spray. OR Spray 3 muffin tins. Shape each piece into a ball and place in prepared pan. You can roll 3 smaller balls and put into each cup of tin to make a cloverlead roll. Repeat with remaining dough in the second pan.
Cover with dish cloth and place in a warm place, like inside the oven with the light on. Allow to rise another 30 minutes to an hour.
Preheat oven to 375*.
Bake for 15 minutes or so, until the tops of the rolls are golden brown.
Remove from the oven and run a cold stick of butter over the tops of the rolls, allowing the butter to coat the top of each roll with yummy goodness only real butter can provide!
